My Addiction

Confession: I have watched You've Got Mail about 200 times. I get lost in the scenes-places like Starbucks, the elevator, and the Nut Shop. I'm always in agony over whether Kathleen and Joe Fox are really going to get together. Watch it - I know you'll love it.

This scene from You've Got Mail is one of my favorites.   I can't tell you how many times I've quoted it in every day life and people look at me like I'm crazy.
"You have no cash?  She has no cash."
"Look, a dollar.  That's all I have, I have a dollar."

Hi, I'm Kelsey and I'm addicted to chick flicks.  When Austin is gone, I sneak in as many as I can.  This one never fails to make day.

Best decision I've ever made

So when Austin and I were engaged, the thought always came up in my mind that I would have to cook meals.  Like real life, home made, edible meals.  Had I ever really done that?  Not so much.   I had perfected my Kraft Macaroni and Cheese and the timing on my Ramen, and I could make some killer chocolate chip cookies, but I didn't really know how to cook...anything.

We've now been married for a little over 3 months and it's actually not as bad as I thought it would be.  I call my mom about 5 times when I'm making anything, but at least it happens, right?  My mom made (delicious) meals every day and did it all herself.  She is the best cook I know.  Obv.  She's my mom.
I'd like to think that I've expanded my culinary creativity and I think it's so fun to make new things.  By the way, Austin knows how to cook way better than I, and he takes his fair share of meals, which are delicious.

Onto the best decision I've ever made...

My sister Amy is Wonderwoman and does just about everything.  She wanted me to come down to her house one weekend and can chicken with her.  Can chicken?  Uhhh gross.  I thought it was the nastiest thing I've ever heard of, but she convinced me due to it's convenience.  We waited til chicken went on sale, and bought 20 lbs each.  We spend about an hour cleaning (so gross) out all the chicken then just about all day canning it.  She's Wonderwoman because she made butterfinger homemade ice cream, baked beans, and bread for her visiting teachers all in this same day.  I stuck to chicken.  When it was all over, the gross part of it kind of wore off when I opened the first can.  I opened it, shredded it with my hands and ate it.  Best thing ever.  Anyway, it's been so great to have what seems like an endless supply of already cooked chicken ready to go, and this is my latest obsession with it...
A delicious quesadilla with mozzarella cheese, canned chicken, and my mom's homemade salsa :)
